Cleaning an automated cocktail machine: the routine that keeps it serving
Daily, weekly and seasonal cleaning for a drinks machine - what actually grows in the lines, why sugar is the real enemy, and a routine that takes ten minutes instead of an evening.

Nobody buys a cocktail machine because of the cleaning. But cleaning is what determines whether you still have a working one in two years, and it is the single most common reason a machine ends up unplugged in a corner.
The good news: a machine that is cleaned on a routine takes about ten minutes a day. A machine that is cleaned when someone notices a problem takes an evening, every time.
What actually grows in there
Understanding the enemy makes the routine obvious.
Sugar is the problem, not alcohol. Spirit lines are close to self-preserving - 40% ethanol is hostile to most things. Syrup, juice and liqueur lines are the opposite: sugar plus moisture plus room temperature is a growth medium. If you are going to be lazy about one set of lines, be lazy about the spirits, never the sweet ones.
Citrus is worse than it looks. Fresh juice contains pulp, and pulp settles in low points of tubing and at connectors. It ferments, and it does it fast in a warm room.
Dairy and cream liqueurs are their own category. They curdle on contact with citrus residue and they will block a line rather than merely dirty it. Give them dedicated lines, and never route a cream liqueur through a tube that has carried lemon.
Biofilm forms in the places you cannot see. Any internal surface with standing liquid grows a film over days. It is not dramatic, it just slowly makes everything taste faintly wrong, which is much harder to diagnose than a blockage.
The daily routine
At the end of service, not the start of the next one:
- Flush the sweet and citrus lines with warm water. Not a token squirt - enough to push the full line volume through several times over.
- Flush the shared nozzle. If several lines converge on one outlet, that outlet has carried everything and gets the most attention.
- Wipe the drip tray and the nozzle exterior. Sticky residue outside the machine attracts exactly what you think it attracts.
- Leave the sweet lines wet with clean water rather than empty. A line full of clean water is far better than a line coated with a drying film of syrup.
Ten minutes. The temptation is to skip it after a long evening, which is precisely the evening that produced the most residue.
The weekly routine
Once a week, add:
- A cleaning-solution cycle through the sweet and citrus lines. Food-safe cleaner or a suitable sanitiser, followed by a thorough water rinse until you cannot smell or taste it. What you use should be a product intended for food-contact equipment - check the label, and check what your local food-safety rules require for your setting.
- Inspect the connectors. Every joint is a place where residue accumulates and where a tube may be starting to slip.
- Check the tubing for cloudiness or stiffness. Silicone that has gone opaque or hard is at the end of its life and will start affecting your flow rate before it fails.
The seasonal routine
Two or three times a year, or between events:
- Replace peristaltic tubing. It is a consumable, it wears by design, and running it to failure means it fails mid-service. Replacing it also means recalibrating those pumps, because a new tube flows differently from a worn one.
- Deep-clean the nozzle assembly by dismantling it rather than flushing it.
- Check the drip tray drain, which is the part everyone forgets until it overflows into something electrical.
Design decisions that halve the work
Some of this is decided when you build the machine, not when you clean it:
- Keep tube runs short and downhill. Long horizontal runs hold liquid, and liquid that sits is liquid that grows things.
- Avoid low points. Any dip in a tube is a reservoir that never fully drains.
- Group by liquid family. Put spirits together and sweet lines together, so a lazy flush of one group is still a complete flush of the lines that need it.
- Build in a water line. A dedicated water input turns flushing from a bucket-and-tubing exercise into a few timed pump runs you trigger from the admin panel. If you are still designing your machine, this is the single change that most improves its daily life.
- Make the nozzle easy to remove. A nozzle that requires tools gets cleaned less often than one that unclips.
Record it
If the machine is in a commercial setting, keep a cleaning log. This matters for two reasons: it is what a food-safety inspection will ask about, and it is what tells you whether the person who says they cleaned it actually did.

The honest warning
Automating drinks does not remove the hygiene obligations of serving drinks. It moves them. A bartender’s equipment is visible and gets washed as a matter of habit; a machine’s fluid path is hidden, and hidden things get neglected.
If nobody in your venue owns the cleaning routine by name, the machine will be neglected. That is not a failure of the technology - it is the most predictable operational risk of installing one, and it is worth deciding who owns it before the machine arrives rather than after.
